Pollo a la brasa is a popular dish in Peruvian cuisine and one of the most consumed foods in Peru. The dish originated in the city of Lima in the 1950s. Originally, the charcoal chicken was predominantly consumed by the wealthy. However, by the 1970s, the dish spread to people of all classes.
